Chili Nut Honey with Cheese
From Better Homes and Gardens
Brian & I made this for Thanksgiving one year using Brie cheese and several people mentioned how good it was. I added just a pinch of cayenne pepper and served it with crackers on the side. The crackers were fine, although crusty bread may have been better. I overdid the amount of honey mixture I poured overtop. Use about half the amount of honey - there was more honey than walnuts. I would like to have the walnuts just bathed in honey, rather than swimming.

1/4 cup walnuts
1/2 cup honey [try 1/4 cup, or less, instead]
3/4 tsp. ground red pepper (cayenne), 1/4 tsp. ground chipotle chili pepper, or 1 tsp. crushed red pepper
4 oz. soft pungent cheese (fresh goat cheese or blue cheese)
Crusty bread or crackers
Preheat oven to 350 degrees F. In shallow baking pan toast walnuts for 10 to 12 minutes, just until they start to brown and become aromatic. Cool slightly; chop coarsely.
In a bowl, stir together nuts, honey, and ground red pepper. [I used just a pinch of cayenne.]
To serve, bring cheese to room temperature. Serve with honey mixture and crusty bread.
Makes 4 servings.
