Salami Cornucopias

Susan makes these without the horseradish. Betty Crocker's 1950 edition calls for it. Both are good. Some fresh parsley and/or chives added to the spread adds a bit of freshness. Small slices of green onion would also be good.

I saw an interesting recipe on the Internet that spread some cream cheese on the salami then added 1 teaspoon of hot pepper jelly before rolling up. This recipe also suggested fig jam for those that do not like hot peppers. This sounds interesting and I may try this sometime. Other recipes add a peppercini.

Salami, thin sliced. about 20 slices
1 8 oz. package cream cheese
Horseradish, few tablespoons
[chopped fresh parsley and/or chives or green onions]

Whip cream cheese and enough horseradish to taste. [Mix in the fresh greens if using.] If not of spreading consistency, add a little milk, half 'n' half, or water.

Take slices of deli salami and spread a thin layer of cream cheese mixture on one side. Fold in half, roll up like a cornucopia and fasten with a toothpick. Arrange on a plate with the toothpick pointing up. [Refrigerate for 1 hour before serving.]

Makes about 20 Cornucopias
