Hazel's Shrimp Dip
One of Jane's favorites. Good with a buttery cracker such as Ritz. Other names are Shrimp Mousse or Shrimp Mold which add gelatin. Mom usually left out the gelatin to make a dip. She used to sell this at the bar and everyone wanted the recipe, which of course she could not reveal.
Some recipes on the Internet add other seasonings like Tabasco sauce, Old Bay Seasoning, horseradish
To make a mold, add 1/2 packet unflavored gelatin (mixed with small amount of hot water). Place in the mold and refrigerate until set. Quickly dip mold in hot water and invert on a plate for serving.
1 10.75 oz. can tomato soup - condensed
8 oz cream cheese
2/3 cup mayonnaise
1 can shrimp - 4 1/2 oz [2 cans shrimp would be better - or even more]
minced onion [green onion would be good]
celery/celery leaves
Heat and cream together tomato soup and cream cheese. Let cool and add mayo, shrimp, minced onion and celery/celery leaves if using. Refrigerate until ready to serve. Serve with crackers.
