Madeira Wine Marinade
This is excellent on London Broil. It has a somewhat sweet taste due to the Madeira wine. There is no need to add salt because soy sauce is very salty.
1 c. soy sauce
6 cloves garlic, minced
1/4 c. olive oil
1 c. Madeira wine [to make a less sweet marinade, cut this back]
1/2 tsp. dried basil
1/2 tsp. dried thyme
1/4 tsp. ground black pepper
2 - 3 pound 2" thick London Broil.
Marinade the meat overnight to tenderize. Cook to medium rare over a charcoal grill basting with leftover marinade. You can also bring leftover marinade to a boil to kill any bacteria from the raw meat and serve with the finished meat.
To serve, cut the London Broil into thin strips against the grain.
Note: Madeira is a sweet fortified wine similar to Port, Marsala and Spanish Sherry.
