Whiskey Cola BBQ Flank Steak (use pork instead)

FMM: We tried this recipe with London Broil and I did not like it. The marinade and sauce was way too sweet for beef in my opinion. We tried the leftover sauce on a pork roast we grilled and it was great! I think it would work good for pork roast with bone, pork loin steaks, and even ribs.

"With cookout season fast approaching, you want one solid barbecue recipe under your belt. A bold spice rub and a homemade barbecue sauce elevate flank steak to a new level of juicy and tender. Prepare the BBQ sauce before you begin grilling. Basting the steak merges the flavors of the sauce and the spice mix. Plus it provides an appetizing glaze.

The BBQ Sauce includes the leftover marinade from the steak, but it's boiled long enough that you don't have to worry about cross-contamination."

For the Marinade:
1 can cola (12 oz.)
3/4 cup pineapple juice (1 6-oz. can)
1/2 cup cider vinegar
1/2 cup whiskey
3 Tbsp. brown sugar
2 Tbsp. chopped fresh garlic
2 Tbsp. minced fresh ginger
2 Tbsp. Worcestershire sauce
1 flank steak (1½ lb.) [use pork instead - too sweet for steak]

For the Spice Mix:
3 Tbsp. paprika
1 Tbsp. dried thyme
1 tsp. kosher salt
1 tsp. granulated garlic
1/2 tsp. cayenne pepper
1/2 tsp. black pepper

Whiskey Cola BBQ Sauce:
Reserved marinade from BBQ Flank Steak
1/2 cup ketchup
1/2 cup diced onion
1 jalapeño, seeded and minced

For the marinade, combine cola, pineapple juice, vinegar, whiskey, brown sugar, chopped garlic, ginger, and Worcestershire in a 9×13-inch baking dish. Score steak and place in marinade, turning to coat. Cover dish and chill at least 2 hours [overnight would be better], turning halfway through. Remove steak from dish, reserving marinade for Whiskey Cola BBQ sauce. Lightly pat steak dry.

For the spice mix, combine paprika, thyme, salt, granulated garlic, cayenne, and black pepper. Rub spice mix onto steak.

For the BBQ sauce, boil reserved marinade, ketchup, onion, and jalapeño in a saucepan over high heat until thick, about 30 minutes. Strain sauce and discard solids before basting or serving.

Preheat grill to high. Brush grill grate with oil.

Grill steak about 6 minutes [adjust for cut of pork using], then flip and baste with Whiskey Cola BBQ sauce [if cooking a pork roast, baste much later in the cooking process]. Grill steak 5 minutes more, then flip and baste again; grill 1 minutes more for medium-rare. Let steak rest 5 minutes before slicing against the grain. Serve steak with remaining Whiskey Cola BBQ sauce.
