Potato and Onion Packets
Delicious and easy. You may use any type of potato you like. The potatoes may be peeled or not.
4 medium to large potatoes, scrubbed and sliced 1/4" thick or cut into wedges
1 large sweet onion, sliced 1/8" inch thick
Salt and pepper to taste
2 tablespoons butter
4 pieces of aluminum foil
for individual packets, or 1 large piece
Heat grill. Prepare packets by first cutting individual pieces of foil large enough to hold one-fourth of all ingredients, or you can use just one large piece of foil. Layer one-fourth potatoes and onions onto center of each piece of foil. Sprinkle with salt and pepper. Divide the butter equally and place on top of each packet. Sprinkle each with about 1 teaspoon of water. Close packets and seal tightly. Place on grill.
Place at the edge of the grill so they do not receive direct heat. Cook until tender and browned, about 30 minutes, depending on size of the potatoes and type of grill. Be sure to turn packets every so often so they do not burn on the side closest to the fire. I do like mine to have a little char, though.
