Gin Gin Mule

Strictly speaking, the Gin Gin Mule is a riff on a Moscow Mule.

1.5 oz London dry
.75 oz lime juice
1 oz simple syrup
Fresh mint
1 oz homemade ginger beer

Muddle 6 or so leaves of mint with the lime and simple syrup in a mixing tin. Add gin, ginger beer and ice and shake briefly. Strain into a highball glass. Fill with fresh cubes and top with fresh mint and a piece of candied ginger.
