Pineapple Margarita

In this tiki-inspired riff on the margarita, pineapple juice and amaretto complement the lime and tequila. The star of this pineapple margarita is undoubtedly the pineapple. But that’s pretty standard for pineapple! I mean, pineapple’s place in tiki drinks is well-established. It pairs beautifully with the lime and tequila of a margarita, too.
Leaning into the tiki inspiration that pineapple brings, I’ve replaced the Triple Sec in this margarita with amaretto—a famous ingredient in the Mai Tai. This almond-flavored liqueur pops up in lots of tiki drinks. Here, it lifts the pineapple flavor.
While this margarita doesn’t benefit from a salted rim, if you’d like a similar look, rim the glass with a turbinado-style sugar like Sugar in the Raw. The large crystals of sugar look fantastic and complement the tropical flavors.
The pineapple juice froths like egg whites when this cocktail is shaken. It hardly needs a garnish! But a pineapple wedge or lime will sit happily on the edge of the glass.
1 lime wedge
Coarse sugar, optional
1-1/2 ounces blanco tequila
1-1/2 ounces pineapple juice
3/4 ounce lime juice
1/2 ounce amaretto
1/2 ounce simple syrup
If desired, moisten rim of 1 cocktail glass with lime wedge and sprinkle sugar on a plate; dip rim in salt. Fill glass with ice.
In an empty cocktail shaker, combine tequila, pineapple juice, lime juice, amaretto and syrup. Fill with ice; cover and shake until frost forms on the outside of the shaker, 15-20 seconds. Strain into prepared glass. Garnish with lime wedge.
