*Superfine sugar, also known as caster sugar, is white sugar that has been ground to a very fine grain. Because of its small grains superfine sugar dissolves more quickly than other types of sugar, so it is frequently used in cocktail recipes and in candy and pastry recipes where large grains of sugar are undesirable--for instance, in meringue or mousse recipes. If you cannot find superfine sugar, you can easily make your own superfine sugar using just a food processor and granulated sugar.
Strawberry Margaritas

Strawberry Margaritas are an extremely easy, tasty cocktail, and its intense red is perfect for a sensual dinner such as for Valentine's Day. There are a lot of Margarita mixes out there...but by ALL means stay away from them....making them from scratch is easy and the results are vastly superior.
1 Basket of Strawberries
1/4 Cup of Sugar
Water
2 Limes Juiced (about 4 tablespoons, which equals 1/4 cup)
1 Lime Thinly Sliced
Silver Tequila to Taste
Put the washed, trimmed & halved Strawberries & Lime Juice in a Blender. Add enough water to cover the Strawberries. Blend....Stir, then Chop then Liquify until its finely blended.
Add Sugar....mix, taste & adjust. At this point you can strain it if you like. For a special event...its nice because otherwise you get strawberry residue leftover. But for a casual event...don't strain (so you don't remove fiber etc.,)
Refrigerate the mix & let the flavors meld. Prior to serving freeze for about 15 minutes or so.
Salt the rim of a Martini Glass. Add Silver Tequila to taste (don't waste anything too fancy...Sauza Hornitos is a perfect Margarita Tequila at $20 or so per bottle) & Strawberry juice, then add a couple of floating lime slices.
BTW, this Strawberry Smoothie is excellent without the Tequila as well.
