Faith's Iced Tea
Place 8 tea bags in a large 2 quart glass container (64 oz.) that has been filled with warm water. Place in the refrigerator for about 8 hours. (Using warm water keeps the tea clear, instead of cloudy.) I also sometimes leave the container on the counter for a few hours until some color develops and then place it in the refrigerator. Don't leave it sit out too long. Iced tea needs to be refrigerated.
Serve over ice with lemon wedges and/or mint sprigs. Add sugar, if desired.
Variations: Add a few sprigs of mint or lemon balm to the container once the water has cooled down. Bruise the herbs a bit first to help release their aromatic oils. I just squeeze the herbs with my hands. I like mint in black tea, such as orange pekoe, and lemon balm in green teas. Green iced tea is especially refreshing in the summer.
