Lemon-Ginger Brew
from https://www.bonappetit.com/

From another web site: Lemon Ginger Brew. It’s spicy and refreshing at the same time. You can drink it straight, or you can use it as a mixer. Mix it with club soda or water. Either way, it makes for a very satisfying elixir.

FMM: This sounds like it would be good for colds. I would heat it for this purpose.

8 oz. ginger, peeled, chopped
1/2 cup fresh lemon juice
1/3 cup agave syrup (nectar) or pure maple syrup [or honey]

Pulse ginger in a food processor to a coarse paste. Bring ginger and 6 cups water to a boil in a medium saucepan; reduce heat and simmer until reduced to 3 cups, 30–40 minutes.

Strain into a large jar and mix in lemon juice and agave; add more lemon juice or agave, if desired. Let cool; cover and chill.

DO AHEAD: Brew can be made 2 weeks ahead. Keep chilled.

Makes about 3½ cups
