Peach Lemonade
from https://www.tasteofhome.com/
Refreshing peach lemonade makes a gorgeous and not-too-sweet summertime sipper. Our recipe incorporates some smart techniques to help yield the best flavor, even from early season or lackluster peaches. Chopping or slicing the fruit then simmering in a sugar syrup helps to soften it and infuses the syrup with fresh peach essence.
One commenter said, "Delicious! I love the natural pink color of this refreshing drink! I leave some lemon pulp and all of the peaches in the lemonade, giving it more texture, color, and more peach flavor. I will defiantly make this again!"
Another commenter suggested using sparkling water instead of regular water. This would work if you were serving the lemonade right away.
4 cups water, divided
2 medium peaches, chopped
1 cup sugar
3/4 cup lemon juice
1 medium lemon, sliced
Mint sprigs, optional
In a small saucepan, bring 2 cups water, peaches and sugar to a boil. Reduce heat; cover and simmer for 5-7 minutes or until peaches are tender. Remove from heat. Cool. Strain, discarding peach skins.
In a large pitcher, combine peach mixture, lemon juice and remaining 2 cups water. Add lemon slices and garnish with mint if desired. Serve over ice.
