Honey Butter
This is a great butter to spread on hot toast (especially good on multi-grain toast), English muffins, biscuits, corn bread, and even pancakes and French toast for breakfast.
1/2 cup (1 stick) butter at room temperature
1/4 cup honey (more or less to taste)
Beat butter with honey until smooth.
For Orange Honey Butter, use orange blossom honey and add 1 tsp. orange zest.
For Cinnamon Flavored Honey Butter: add 1/4 teaspoon ground cinnamon and 1/4 teaspoon vanilla extract.
For Maple Butter, substitute maple syrup for the honey.

3 cups fresh squeezed orange juice
2 sticks butter, slightly softened
2 tablespoons honey
Pinch salt
Place orange juice in a small non-reactive saucepan over high heat and reduce to 3 tablespoons. Place butter in a bowl and add the orange syrup, honey, and salt; mix until combined. Scoop into a large ramekin, cover with plastic wrap, and refrigerate until firm, about 2 hours.
Other recipes add orange zest along with orange juice instead of reducing the orange juice down.
