Cinnamon Applesauce Bread

Variations: Add ½ cup of any of the following: your favorite chopped nuts like pecans or walnuts, raisins, and/or peeled and chopped apple.

FMM: This is a very moist loaf and does not toast easily in a regular toaster because of this. It gets very soft and does not hold its shape well so it is hard to pick the slices out of the toaster. Broiling, or frying in a pan, works better. The taste is good. I added raisins, which I liked, but was expecting nuts as I was eating it. The batter just about fills a 9x5 loaf pan (with the raisins), so be careful about adding too many add-ins. I do not think I would make this again, mainly because it is so moist. If I did, I would add nuts instead of raisins. I would also try cutting the sugar back a bit and adding more cinnamon.

1 1/4 cup applesauce
3/4 cup sugar
1/2 cup vegetable oil
2 eggs
3 tablespoon milk
2 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon pumpkin pie spice [optional, contains cloves]
1/4 teaspoon salt

Preheat oven to 350 degrees and grease a 9x5 loaf pan or 5 mini loaf pans.

In a medium bowl, combine the applesauce, sugar, vegetable oil, eggs, and milk.

Slowly add in the flour, baking soda, baking powder, cinnamon, nutmeg, pumpkin pie spice, and salt.

Stir until just combined.

Pour batter into prepared loaf pan(s) and place in oven to bake for 30 minutes if making mini loaves, or about 60 minutes if making large loaf.

Once toothpick comes out clean once inserted in center, remove from oven and allow to cool slightly before serving!
