Key Lime Bread
from https://www.tasteofhome.com/

This easy Key lime bread is a sweet and tangy twist on classic quick bread. The glazed loaf is perfect for breakfast, dessert or a midday snack. Made with Key lime juice and zest, this glazed loaf tastes like a little slice of sunshine. The bread turns out just as soft and moist as easy quick bread recipes like banana bread and zucchini bread.
You could use regular limes in this Key lime bread recipe, but it’s worth seeking out the real deal. Key limes are small, round limes known for their tart, aromatic character. Their intense, tangy flavor and slightly floral aroma are the major differentiators between Key lime vs. lime. Commonly used in pies and cocktails, Key lime’s distinct taste adds a bright, zesty punch to any dish.
2/3 cup butter, softened
2 cups sugar
4 large eggs, room temperature
2 tablespoons grated lime zest
2 tablespoons Key lime juice [plus zest?]
1 teaspoon vanilla extract
3 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
1 cup 2% milk [I would use whole milk]
1 cup chopped walnuts [coconut?}
GLAZE:
2/3 cup confectioners' sugar
1 to 2 tablespoons Key lime juice [plus zest?]
Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs. Beat in lime zest, juice and vanilla. Combine flour, baking powder and salt; gradually add to creamed mixture alternately with milk, beating well after each addition. Fold in walnuts.
Transfer to 2 greased 9x5-in. loaf pans. Bake 50-55 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes before removing from pans to wire racks.
Combine confectioners' sugar and enough lime juice to reach desired consistency; drizzle over warm bread. Cool completely.
