1940s Pineapple Nut Bread
FMM: I think I would like to try this recipe first leaving the raisins out. I would prefer the flavor of the pineapple to be dominant and the raisins would detract from this.
2 cups sifted all-purpose flour
1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup raisins coarsely chopped, optional
1 teaspoon vanilla
1 egg lightly beaten
2 tablespoons melted butter or margarine
1 cup crushed pineapple, not drained
1 teaspoon baking soda
1/2 cup chopped nuts [walnuts or macadamia nuts]
Resift flour with sugar, baking powder and salt in bowl; add raisins, if using, and nuts. Combine egg, vanilla and shortening. Add to dry mixture. Stir soda into pineapple. Add to other mixture, stirring just until combined.
Pour into a greased loaf pan 8 x 4 x 4. Bake in preheated oven 350 degrees for 1 hour until a toothpick inserted in the center comes out dry. Let cool thoroughly before slicing.
