Ed Wood’s Saudi Date Bread
from World Sourdoughs From Antiquity, by Ed Wood

FMM: This recipe, which sounds interesting, doesn’t have a bulk fermentation, which I would add to the recipe in order to develop a bit of sour taste and develop the gluten.

2 cups sourdough starter
1/2 cup water
2 tablespoons oil
1 cup chopped dates
1 cup chopped nuts
1/4 cup sugar
1 teaspoon salt
3 cups flour

Combine starter, water, oil, dates, nuts, sugar and salt in bowl and mix well. Add flour and mix well again. Place in greased loaf pan and allow to rise in warm place (85 degrees) 1 to 2 hours.

Bake at 375 degrees 55 to 60 minutes. Turn out of pan and cool on wire rack. Makes 1 loaf.
