Granola Ideas

There are five basic components for making granola and granola bars. You can mix and match all sorts of different ingredients in these categories to come up with new flavor combinations. The main difference between granola and the bars, as far as I can tell, is that to make the bars you press them into a pan to bake. Regular granola is baked on a cookie sheet and turned every so often to assure even browning.

Here are some general guidelines for making Granola:

To bring the grains, nuts, seeds and dried fruits together, here are some syrup mixtures ideas for granola and granola bars.

Several recipes for granola use:
1/2 cup oil
1/2 cup honey or maple syrup

Some granola recipes use powdered milk for flavoring - see Oat and Nut Granola with Sunflower Seeds

A recipe using condensed milk (see Granola Bar recipes):
1 can condensed milk (no additional sweetener)
8 tablespoons (1 stick) butter

Alton Brown uses for his granola bars:
1/2 cup honey
1/4 cup brown sugar
2 Tbsp. butter

A recipe at Epicurious uses for granola bars:
6 tablespoons (3/4 stick) unsalted butter
1/3 cup packed dark brown sugar
3 tablespoons honey

Another idea using apple butter for granola bars:
1/4 cup honey (add more if you like the bars sweeter)
3/4 cup unsweetened apple butter
1/2 teaspoon vanilla
1/2 cup whole wheat pastry flour or oat flour (make from oatmeal in food processor)

Sunny Anderson adds 2 whisked egg whites to her granola bar mixture just before pressing it into the pan (after syrup mixture has been added). This probably helps them stay together, rather than crumbling apart - a common complaint of many people who have tried making granola bars. Her syrup mixture that she adds to the ingredients before adding the egg whites is:
1/2 cup maple syrup
1/4 cup brown sugar
1/4 cup vegetable oil

Emeril's Peanut Butter Granola Bars uses, for 3 cups oats, 1 1/2 cups nuts/seeds, 1 cup dried fruit:
4 tablespoons unsalted butter
1/4 cup honey
1/3 cup light brown sugar
1/2 cup light corn syrup
1/2 cup creamy peanut butter
