Soaking Steel Cut Oats Overnight (To Shorten Cooking Time)
Steel Cut Oats take about 30 minutes to cook, but you can shorten the cooking time by soaking them overnight. Leftovers can be refrigerated and reheated during the next few days. Add a little water and slowly heat over low heat.
Steel Cut Oats recipe - the steel cut oats have absorbed quite a bit of water while soaking. Use only 1 - 1 1/2 cups water or milk the next day when finish cooking them. Bring to a boil and then turn burner down so it just simmers. Cook until the liquid has been absorbed.
FMM: This worked out okay, but it dirties more dishes: strainer for straining and rinsing, cleaning the soaking pan to cook it in, container to store extra oatmeal in frig, you are cleaning the cooking pan and spoons twice, once for each day you eat it. I would rather just cook it and get it over with.
3/4 cup steel cut oats (1 cup made a little more that 2 servings, but not quite enough for 3)
Warm water to cover
1 Tbsp. lemon juice
sprinkle of salt
Cover the oats with warm water by a couple of inches, add the lemon juice and salt. Stir and cover. Let sit on the counter or stovetop overnight.
Once they have soaked, pour them into a colander and rinse under water. Cook as you would normally adding about 1 1/2 cups water or milk. Stir every so often to make sure they are not sticking to the bottom of the pan. The time should be shorter now.
Makes about 2 servings.
