Breakfast Sandwiches (Mickey D's)

Egg McMuffin

These can be made ahead, wrapped in foil and reheated in the oven when ready to eat. This is a great make-ahead tip for having a breakfast sandwich you can simple heat in the morning.

1 English muffin (or biscuit)
2 thin slices Canadian bacon (or) 1 pork sausage patty
1 egg, fried
1 slice American cheese (or other cheese)
butter

Fry the bacon or pork sausage until it is cooked to your taste; remove. Pour off most of the fat from the pan and fry the egg while toasting the muffin. Lightly butter the toasted English muffin.

To assemble, place the cheese on one half of the English muffin. Top with the egg and Canadian bacon, then, the other muffin half. Serve immediately or let cool and wrap in foil to reheat later. (To reheat, place foil wrapped McMuffin in a 350 degree oven for 15 to 20 minutes.)

Note: McDonald's does not melt the cheese, but stacks the sandwich in this order: Lay a slice of cheese on the bottom of the English muffin, followed by the egg, Canadian bacon, and top of the muffin. They then wrap it and the residual heat melts the cheese.

Tip: To get your eggs to fry in perfect circles which fit the muffin, use tuna cans that have the bottom and top cut off. You can also buy rings for cooking English muffins in a fry pan and these work well. Be sure to grease the tins befor using. Place these in your greased pan and break your egg into them. If you like your egg well done, keep your burner heat low and cover with a lid. Remove the rings. If you plan on reheating the sandwiches, cook the eggs so they are a bit underdone.
