Apple Dutch Baby
This recipe is from Mary Cumbo, one of Brian’s old girlfriends and a friend of mind.
2 Tbsp. unsalted butter
2 large eggs
6 Tbsp. flour
6 Tbsp. milk
2 Tbsp. dark brown sugar
1 Tbsp. lemon juice
1/2 golden delicious apple, sliced thin
Mix the brown sugar in the lemon juice. Add the apple slices and mix so the slices are covered with the lemon juice and brown sugar.
Preheat the oven to 425 degrees. Divide the butter between two shallow oven proof dishes, such a glass pie plates and put in oven to melt butter.
Combine the eggs, flour, and milk in a bowl just until combined; the batter will be lumpy. Pour the batter into the hot dishes and arrange the apples in a spoke-like pattern on top.
Bake for 15 to 20 minutes until puffed and golden.
They will be hot! Serve with maple syrup or confectioner’s sugar. Mary likes to pour some of the lemon-brown sugar mixture over the top.
