Jane's Microwave Peanut Brittle
1 cup sugar
1/2 cup light corn syrup
1/8 teaspoon salt
1 1/2 cups dry roasted peanuts
1 tablespoon butter or margarine
1 teaspoon baking soda
1 teaspoon vanilla
Use pot holders, the casserole dish gets extremely hot. In a 2 quart microwave-safe casserole dish, dissolve the sugar, corn syrup, and salt in the microwave for five minutes on high.
Add the peanuts and microwave for five more minutes. Stir after two minutes and again after four minutes. Continue cooking in the microwave until lightly brown.
Immediately add the last three ingredients (butter, baking soda and vanilla) stirring very fast. Note: the Peanut Brittle will already be getting hard.
Spread thin on a buttered cookie sheet, working quickly. Let stand or refrigerate for ten to fifteen minutes. Break into bite size pieces to serve.
Cashew Coconut Brittle: Substitute a can of Cashew nuts for the
dry roasted peanuts, add 3/4 cup shredded coconut, and use coconut extract
instead of vanilla . . . or vanilla may be used.
