York Peppermint Patties

In York, Pennsylvania, Henry C. Kessler first concocted this confection in the late 1930s at his candy factory, the York Cone Company. The company was originally established to make ice cream cones, but by the end of World War II, the peppermint patty had become so popular that the company discontinued all other products. In 1972, the company was sold to Peter Paul, manufacturers of Almond Joy and Mounds. Cadbury USA purchased the firm in 1978, and in 1988 the York Peppermint Pattie became the property of Hershey USA.
Many chocolate-covered peppermints had been made before the York Peppermint Pattie came on the market, but Kessler's version was firm and crisp, while the competition was soft and gummy. One former employee and York resident remembered the final test the patty went through before it left the factory. "It was a snap test. If the candy didn't break clean in the middle, it was a second." For years, seconds were sold to visitors at the plant for fifty cents a pound.
According to Joy of Baking, Peppermint Patties are a combination of confectioners sugar (powdered or icing), butter, flavorings, and evaporated milk. In order to get that real authentic peppermint taste, peppermint oil must be used, not peppermint extract. Peppermint Oil has a much stronger and more concentrated flavor than peppermint extract so only a small amount of the oil is needed to give these patties that cool and refreshing mint flavor. Unfortunately, peppermint oil is not found in grocery stores. You can find it at some pharmacies, health food stores, or you can order it on the Internet from the bakerscatalogue.com or amazon.com.
Once the batter is made it needs to be chilled before rolling into balls. (Most recipes roll the dough out and cut the patties using a biscuit cutter. You can probably get the candies thinner this way.) Then the balls are flattened into a patty shape and refrigerated again until firm. All that is left to do is to dip each peppermint patty in melted chocolate that has been combined with a little vegetable shortening. The shortening keeps the chocolate shiny even when refrigerated. It also means we do not have to temper the chocolate; a step that most of us like to avoid. These patties will keep in the refrigerator for up to a month and make a unique and welcome holiday gift.
Peppermint Patties ingredients from Hershey’s web site: Sugar, Corn Syrup, Semi-Sweet Chocolate (Chocolate, Sugar, Cocoa, Milk Fat, Lecithin, Cocoa Butter, PGPR, Natural Flavor, Milk), Invert Sugar, Egg Whites, Oil of Peppermint.
Invert sugar is an edible mixture of glucose and fructose, which are both simple sugars. Invert sugar indeed is “sweeter than sugar” – in fact, it's 125% sweeter than ordinary white table sugar. That's one of the reasons bakers love it: it packs a stronger punch with less product. See What is Invert Sugar? (with recipe).

2 cups (240 grams) confectioners (powdered or icing) sugar
1 1/2 tablespoons (20 grams) unsalted butter, softened
1/4 - 1/2 teaspoon peppermint oil (do not use peppermint extract and be sure it is labeled for internal use)
1/4 teaspoon pure vanilla extract
2 tablespoons (30 ml) evaporated milk or heavy cream
Chocolate Coating:
9 ounces (225 grams) semi sweet or bittersweet chocolate, coarsely chopped (not milk chocolate)
1 tablespoon (12 grams) shortening
Peppermint Patties: In the bowl of your electric stand mixer, fitted with the paddle attachment (or with a hand mixer), beat (on low speed) the sugar, butter, peppermint oil, vanilla extract, and evaporated milk (or heavy cream) until combined. Increase the speed to medium low and beat until very creamy and smooth (like Play-Doh) (about 2 minutes).
Place the dough between two sheets of parchment or wax paper and roll until it is about 1/4 inch (.5 cm) thick (about an 8 inch (20 cm) round). As you roll, periodically check the top and bottom sheets of parchment and smooth out any wrinkles. Place dough on a baking sheet (along with the parchment paper) and place in the refrigerator until cold and very firm (about 60 minutes). (For faster chilling, place in the freezer for about 15 minutes).
Once chilled, remove from refrigerator or freezer, and peel off the top piece of parchment paper. Using an 1 1/2 inch (4 cm) cookie cutter, that has been dipped in powdered sugar, cut out the patties. Place on a baking sheet lined with parchment paper or foil. Cover and place in the refrigerator until the patties are firm (at least one hour, or even overnight) or in the freezer for about 15 minutes. Gather up the scraps, reroll to 1/4 inch (.5 cm) thick, freeze, cut out remaining patties, and freeze until firm.
Chocolate Coating: Melt the chocolate and shortening in a heatproof bowl, placed over a saucepan of simmering water. Remove the patties from the refrigerator (or freezer) and dip, one patty at a time, into the melted chocolate, making sure each patty is completely coated with chocolate. (You can use a fork or a chocolate dipping fork.) Let any excess chocolate drip back into the bowl and then place the patties back on the parchment lined baking sheet. Once all the patties have been dipped in the chocolate, return to the refrigerator to chill until firm (30 - 60 minutes). Store in the refrigerator, in an airtight container, (separate layers with parchment paper or wax paper) for a couple of weeks or they can be frozen.
Makes about 28 - 1 1/2 inch (4 cm) Peppermint Patties. Preparation time 90 minutes.

1 lg egg white
4 c powdered sugar
1/3 c light corn syrup
1/2 tsp peppermint oil or extract
cornstarch for dusting
2 pkg (12-oz) semisweet chocolate chips
In a medium stainless steel bowl, beat the egg white until frothy but not stiff. (DO NOT USE a plastic bowl.) Slowly add the powdered sugar while blending with an electric mixer set on medium speed.
Add the corn syrup and peppermint oil or extract and knead the mixture with your hands until it has the smooth consistency of dough. Add more powdered sugar if necessary, until mixture is no longer sticky.
Using a surface and rolling pin heavily dusted with cornstarch, roll out the peppermint dough until it is about 1/4 inch thick.
Punch out circles of peppermint dough with a biscuit cutter or a clean can with a diameter of about 2 1/2 inches. Make approximately 20, place them on plates or cookie sheets, and let them firm up in the refrigerator, about 45 minutes.
Melt the chocolate chips in a microwave set on high for 2 minutes. Stir halfway through the heating time. Melt thoroughly, but do not overheat.
Drop each patty into the chocolate and coat completely. Using a large serving fork, or 2 dinner forks, one in each hand, lift the coated patty from the chocolate. Gently tap the forks against the bowl to knock off the excess chocolate, and place each patty on wax paper.
Chill the peppermint patties until firm, about 30 minutes.
Makes 20 peppermint patties.
