Jane's Green Corn Flake Holly . . . a nice decoration for your holiday cookie plate

Green Corn Flake Holly

Jane always had these on her Christmas cookie tray. They add a wonderful green accent giving the tray a festive flare.

1/2 cup butter or margarine
40 large marshmallows (or 4 cups small marshmallows)
1 teaspoon green food coloring (yes, 1 tsp)
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
4 cups corn flakes
cinnamon red hot candies (about 100)

Microwave marshmallows and butter on High for 2 minutes. Stir, then microwave on High 2 more minutes. This can be done in a double boiler instead of a microwave.

Quickly add and mix the coloring and extracts. Quickly add the corn flakes and mix to cover.

Drop by spoonfuls in clumps on lightly greased wax paper and decorate with 3 red hots each. Greased fingers and using 2 greased spoons helps with this step.

Another recipe gave these instructions for shaping the wreaths: Form small balls and place on wax or parchment paper. It helps if you dip the tips of your fingers in olive oil first so the mixture won’t stick to your hands. Lightly push your thumb through the middle of the balls to form a wreath shape.

Once cool, store (not touching) between sheets of waxed paper in a tight container.
