Great Aunt Freda's Date Squares
We never made these for Christmas when I was young, but Mom later found a recipe for Date Squares that she said Great Aunt Freda always made. She was quite fond of them and baked them often for Christmas. They are dusted in confectioner's sugar after baked.
2 eggs
1 1/4 cup confectioner's sugar
1 cup chopped dates
1 cup chopped walnuts
1/4 cup flour
1/2 tsp. salt
1 Tbsp. lemon juice
1/2 tsp vanilla
1 Tbsp. butter, melted
extra confectioner's sugar for dusting
Grease a 9 x 9 inch baking pan. Preheat the oven to 350 degrees F.
Beat the eggs and the confectioner's sugar until light in color. Add the rest of the ingredients and stir just until blended together.
Bake in preheated oven for 25 minutes until lightly browned. Cool 15 minutes; cut into small bars and roll in confectioner's sugar to coat.
