Susan's Lemon Squares

This recipe looks much like Betty Crocker's Lemon Squares, except the recipe on Betty Crocker's web site adds 2 teaspoons grated lemon zest to the Topping ingredients and uses only 2 Tbsp. lemon juice. Reviewers thought the recipe needed more lemon juice. Instructions in [ ] are from their web site. Most recipes add a bit of flour to the filling; this recipe is an exception.
Crust:
1 cup flour
1/2 cup butter
1/4 cup confectioner's sugar
Topping:
2 eggs
1 cup sugar
1/2 tsp. baking powder
2 1/2 Tbsp. lemon juice
dash of salt
Confectioner's sugar, to spinkle on top once done
Preheat the oven to 350 degrees.
To make the crust, mix together the flour, butter and confectioner's sugar until well mixed. Pat into an 8 x 8 inch square baking pan. Bake in preheated oven for 20 minutes until lightly browned.
Meanwhile, make the topping by beating all the topping ingredients together [use an electric mixer on high speed and beat about 3 minutes or until light and fluffy]. Pour over the baked crust and bake for an additional 20 - 25 minutes. [Bake 25 to 30 minutes or until no indentation remains when touched lightly in center. Cool completely in pan on cooling rack, about 1 hour. Sprinkle with powdered sugar. Cut into 5 rows by 5 rows.]
Cool. Cut into squares.
