Easy Strawberry Cookies
from https://anitalianinmykitchen.com/

Easy Strawberry Cookies made with Fresh Strawberries and baked in 15 minutes. One bowl, no beaters necessary, soft, delicious cookies. Sprinkle a little powdered sugar or drizzle with melted chocolate and make them extra special.
The cookies should be stored in an airtight container. They can be left out at room temperature (if it isn’t too warm) over night. Longer than that they should be stored in the refrigerator. They will keep for up to a week.
FMM: We made these and I found after putting them in a plastic bag (in a single layer or you could put them in a countainer with wax paper between the layers) that they were very moist and tended to fall apart when picked up. The strawberries were still very moist. I found drying them on the cooling racks for at least 12 hours dried them out enough that they stayed together better. Brian really liked them and they did have a nice strawberry flavor. They had a pronounced flavor that I couldn’t put my finger on that I was not fond of. Maybe they tasted too floury, or maybe it was the oil or even the lemon juice. All the other recipes I found on the Internet use butter instead of oil. I will try this next time and maybe cut back on the lemon juice. Don’t skip the sugar sprinkle on top after dropping them on the baking sheets; it definitely adds a nice touch to the cookie, sort of like a sugar cookie.
