Cinnamon Roll Cookies

These Cinnamon Roll Cookies taste just like cinnamon rolls in cookie form.

This is an excellent cookie, although it is way too sweet. There is the sugar in the cookie, suagr in the cinnamon and sugar Finishing, sugar in the glaze, and sugar in the chips. I would cut the chips back and only use a drizzle of glaze, or omit it entirely. Wouldn't really be a cinnamon roll then, though. I would also cut the sugar in the dough back a bit to compensate for the chips. White sugar adds crispness and cookie spread, and brown sugar adds chewiness, so I wouldn't cut them back by a lot. See How to Adjust Cookie Recipes. Finally, it makes a lot of cookies (each fairly large); I would cut the recipe in half.

3 cups all-purpose flour
1 teaspoon baking soda
1 cup salted butter, (2 sticks), softened
1 1/4 cups granulated sugar [cut back to 1 cup]
3/4 cup packed light-brown sugar [cut back to 1/2 cup]
2 teaspoons vanilla extract
2 large eggs
1 2/3 cups cinnamon chips [cut back to 1 cup]
1 cup white chocolate chips [cut back to 1/2 cup]

For Finishing:
1/2 cup granulated sugar [start w/ 1/4 cup - had quite a bit left]
1 Tablespoon ground cinnamon [start w/ 1 1/2 tsp.]

Glaze:
2 cups powdered sugar
2 TBS warm water

Preheat oven to 350 degrees. Line baking sheets with parchment paper. In a medium-large bowl, stir flour and baking soda together. Set aside.

Beat butter and sugars with your electric mixer on medium speed until pale and fluffy, about 1 minute. Beat in eggs, 1 at a time, and then vanilla extract. Reduce speed; gradually add flour mixture, and mix until just combined. Mix in cinnamon and white chocolate chips.

In a small bowl, combine sugar and cinnamon [had quite a bit left over]. Using a medium cookie scoop, scoop dough and roll each ball in the cinnamon sugar mixture. Place on prepared baking sheet, about 2 inches apart. Bake for about 8-10 minutes, until edges JUST begin to turn golden. Let cookies cool on sheet for 5 minutes before removing to wire rack.

Prepare glaze: In a medium sized bowl, whisk together powdered sugar and warm water until smooth. Spread glaze on cooled cookies. [I had to make a lot more glaze than this.]

3 dozen cookies [I got a little over 4 dozens cookies, and they were plenty big.]
