Eleanor Mecca's Pizzelle Recipe

Eleanor is one of my Italian neighbors in South Philadelphia. She makes Pizzelles every year for Christmas.

6 eggs
1 cup of oil (not olive oil - she uses corn or canola oil)
1 tablespoon of anise seeds (she uses McCormick's)
1 cup of sugar
1 tablespoon of vanilla
3 cups flour

Beat eggs first then add other wet ingredients. Stir in sugar and anise seeds and then add flour.

Mix by hand, not mixer.
