Baked Sliced Ham (Geschnittener Bratschinken)
from German Cooking by Marianna Olszewska Heberle

Before cooking the ham slices, score edges of each ham slice by cutting two inches toward center in three places on each slice so ham will not curl up while cooking.

2 (2-inch thick) center cut ham slices
6 medium onions
2 red bell peppers
3 tablespoons butter or margarine
1/4 cup packed brown sugar
2 cups chicken broth or chicken bouillon
6 whole cloves
1 tablespoon ground sweet paprika

Preheat oven to 350°.

Arrange ham slices in a shallow roasting pan so both slices are flat. Remove skins from onions and slice onions crosswise into thirds, keeping their rings intact. Remove stems and seeds from bell peppers and cut peppers into large chunks.

Arrange onions and peppers around ham slices with flat sides of onions face down in roasting pan. Equally dab butter or margarine on top of onions, then spoon brown sugar evenly on top of onions, next to butter or margarine. Carefully pour brth or bouillon into roasting pan. Add cloves. Sprinkle paprika over ham slices.

Cover with tight-fitting lid and bake 1 hour or until onions are tender. Uncover; bake 10 more minutes.

Serve hot, with cooked vegetables and juices.

Variation: Serve ham slices with Cumberland Sauce.
