Pork Chops with Apples (Schweinekoteletts mit Äpfeln)
from German Cooking by Marianna Olszewska Heberle
A simple way to fix pork chops. Different types of apples can change the flavoring. Experiment with green, red and yellow varieties.
2 Tbsp. butter or margarine
6 thick pork loin rib chops
1/4 cup chicken broth
2 medium onions, sliced
2 firm apples, peeled, cored and sliced
Salt to taste
1 1/2 Tbsp. chopped fresh parsley
Melt butter or margarine in a large skillet over medium-high heat. Add pork chops; sauté until browned on both sides. Add chicken broth. Cover with a tight-fitting lid and cook over medium-low heat 1 hour, turning occasionally.
Add onion and apples; cook, covered, 10 minutes. Uncover; cook 10 more minutes or until apples are tender and a golden color.
Season with salt to taste. Garnish with parsley. Serve hot.
