Sesame-Orange Beef

4 tsp. cornstarch
2 tsp. soy sauce
1 lbs. beef tri tip roast, thinly sliced across the grain
1/4 c. orange juice (see mandarin oranges ingredient below)
2 Tbsp. oyster sauce
1 Tbsp. honey
1 Tbsp. sesame seeds, toasted
2 Tbsp. vegetable oil
1 tsp. ginger root, peeled and minced
1 c. mandarin oranges, in juice, save juice for sauce
1/4 tsp. red pepper flakes, or to taste

1. To make marinade, combine 2 tsp cornstarch with the soy sauce in a bowl and mix well. Add beef and stir to coat evenly. Let stand for 10 minutes.

2. To make the sauce, combine the orange juice, oyster sauce, honey, remaining 2 tsp cornstarch and red pepper flakes in small bowl and stir to combine. Set aside.

3. Place a stir-fry pan over high heat until hot. Add the oil, swirling to coat. Add ginger and cook, stirring, until fragrant, about 10 seconds. Add the beef and stir-fry until caramelized on the edges and still slightly pink in the center, 2-3 minutes.

4. Add the sauce. Cook, stirring, until the sauce boils and thickens slightly, about 20 seconds. Stir in the orange segments, stir and cook until heated through.

5. Transfer to a serving plate, sprinkle with the sesame seeds and serve. Goes well with long-grain brown rice.
