Beans Foogath
By Petrina Verma Sarkar, indianfood.about.com
Foogath is a preparation from the coastal state of Goa, the land that brings us those exotic-sounding curries like the "vindaloo" and "cafreal." The essential components of a good foogath are tempering with mustard seeds, curry leaves and chilies, and garnishing with some grated coconut. Check out this French bean foogath and delight in its semi-crunchy texture.
500 gms french beans chopped into fine circles
2 tbsps oil
3/4 tsp mustard seeds
2 green chillies chopped fine
6-8 curry leaves washed and dried on paper towels
1 large onion chopped fine
4 tbsps fresh grated coconut
Salt to taste
Heat the oil in a shallow pan and add mustard seeds. When they stop spluttering add the curry leaves and green chillies and sauté a little. Now add the onion and fry till it turns soft. Add the green beans, salt to taste and cook till they are done.
Add the grated coconut and mix well. Cook for another minute and then turn off the flame. Serve hot with rice or chapatis (Indian flatbread).
