2 Tbsp. soy sauce (ketjap manis preferred)
2 garlic cloves, minced
1 Tbsp. dark brown sugar
1/4 tsp. cumin
1/2 tsp. coriander
1/4 tsp. cardamom
1 tsp. turmeric
1/2 tsp. hot pepper flakes

Add, for beef:
     Lemon grass or rind
     1/2 tsp. shrimp paste (optional)

Add, for lamb or chicken:
2 Tbsp. liquid extracted from tamarind soaked in water

Add, for pork:
3 ground macadamia nuts or, 1 tsp. crunchy peanut butter
3 Tbsp. liquid extracted from tamarind soaked in water

Mix all the marinade ingredients together and set aside. Prepare the meat which may be beef, pork, chicken, or lamb, by cutting into thin strips about an inch wide and 1/4 inch thick. Pound the strips thin using a meat mallet and place in the marinade. Marinate the meat at least one hour. When ready to grill, thread the meat lengthwise onto bamboo skewers and place over a hot fire until cooked and browned.

Serve with Peanut Sauce.
