Irish Cheese Board

Clockwise, from top left: Cashel Blue farmhouse cheese,
Dubliner, Blarney Castle and Kerrygold Aged Cheddar.
No St. Patrick's Day celebration is complete without a selection of Irish cheeses. Try such varieties as Dubliner, Blarney Castle or Cashel Blue, all made with milk from grass-fed cows raised on small family farms in Ireland, where no growth hormones are used.
Cheeses:
Dubliner is a crowd-pleasing, full-flavored cheese with a balanced sweetness and bite of an aged Parmesan.
Kerrygold Aged Cheddar, noted for its rich, round flavor and smooth body.
Blarney Castle, a creamy and mild, semi-soft, part-skim cheese, offers a pleasant flavor contrast.
Cashel Blue, Ireland's original artisanal blue cheese, was developed in 1984 and still is made entirely by hand on the family farm of Jane and Louis Grubb in County Tipperary, Ireland.
For an appetizer, arrange cheeses on a bread board Irish style, with a scattering of nuts, fruit and a bowl of chutney.
Irish Market Plate
For supper, turn your cheese board into an Irish market plate, adding an assortment of cold meats, smoked fish, roasted red peppers, sliced cucumber and mustard, accompanied by hearty chunks of brown bread.
Imagine all the smells, tastes and textures of an Irish Market. The fragrant grass-fed cheeses, the smoky cured meats and fishes, the cracked breads and the assorted herbs, vegetables and oils. Hungry yet? Combine all your favorites on one plate and serve it to party guests as a taste of Ireland or simply enjoy at home with family as a gourmet weekend snack.
