Brian's Layered Tacos
Brian used to make a layered taco dish when we first met; it was the closest to Mexican we got in Allegany County, NY. It was crisp fried corn tortillas that he layer with a beef mixture, cheese, shredded cabbage and raw onion. There was jalepeno pepper and tomato puree in it. I remember it being quite tasty.
We decided to re-create the recipe. We made the beef mixture we use for ground beef tacos and added a large can of tomato puree. Brian then crisp-fried the corn tortillas and made layers of the ingredients:
Crisp fried corn tortillas
Beef taco mixture w/ 1 large can (29 oz.) of tomoto puree added
shredded cabbage
chopped onion
grated shredded Cheddar cheese
Bake in 350 degree oven for 30 minutes until hot.
Serve with sour cream, and chopped fresh onion, chopped fresh radish, thinly sliced lettuce, or any other fresh vegetable.
