Choose your favorite fillings and toppings.

1 recipe Shredded Beef
1 dozen large corn tortillas, or flour for ‘soft tacos'
oil for frying

Other Fillings and Toppings:
Refried beans, heated with a little water
Shredded cheddar or Monterey Jack cheese
Chopped sweet or green onion
Chopped fresh tomato
Finely shredded lettuce or shredded cabbage
Sour Cream and/or Guacamole
Fresh tomato salsa (Pico de Gallo)

If you are using corn tortillas, heat half an inch oil in a small skillet to medium high (about 365 degrees). Fry each tortilla for about 3 seconds a side. Blot with paper towels, fold to form a taco and keep in a warm oven. Repeat until all the tortillas are fried.

If you are using flour tortillas, either wrap in foil (6 in each piece of foil) and bake at 300 degrees for 15 minutes, or wrap 6 at a time in a damp dish towel (or strong paper towel) and microwave on high for 1 minute.

Fill with the shredded beef, refried beans and any other toppings you would like.
