Chicken Souvlaki

Souvlaki derives from the Greek word meaning skewer. It describes the meat and sometimes vegetables that are stacked on a skewer, marinated with wonderful Greek flavors, and barbequed to perfection. This dish can be served on the skewer itself, as a main meal next to potatoes or rice, or in a pita bread with Tzatziki on top.

FMM: When we made these, we took a cue from our Beef Kebabs recipe and grilled onion, green peppers, and tomatoes and made pocket sandwiches with pita bread. While Tzatziki would be a nice accompaniment for the skewers when served as the main dish, we decided to top the pocket ingredients with plain yogurt and Tahini dressing.

3 lbs chicken
½ cup olive oil, more if needed
2 lemons, juiced (we added 2/3 cups based on our Beef Kebabs recipe, and found it delicious)
Zest from one lemon
2 tablespoons oregano
1 tablespoon thyme
1 clove garlic, grated
salt and pepper to taste

Remove any unwanted fat from chicken and cut into small cubes.

Combine all ingredients in bowl to make marinade. Give the mixture a try before adding raw meat to adjust as necessary.

Add chicken to bowl and mix – coating chicken. Cover and let marinate in the fridge for at least 30 minutes.

Take skewer and add chicken, starting at bottom and work your way up. Repeat until all chicken is used.

Turn on BBQ to medium-high heat. Add skewers and cook about 5-7 minutes on each side, cook to preference (e.g. medium, well,).

Once done, remove, and serve with some fresh tzatziki (plain yogurt and Tahini dressing) and pita bread! Tabbouleh or Greek Country Salad are great side salads, very summery and light.

Yield: 5-7 skewers
