How to Grill Halloumi Cheese
from https://www.thespruce.com/

Halloumi is a white cheese from Cyprus made from a blend of sheep and goat's milk. The flavor is mild but salty and the taste is similar to that of mozzarella cheese. Some types of halloumi have dried herbs such as mint or oregano added as well.
When halloumi cheese is being made, the curds are typically cooked at a high heat for at least an hour, but often more. This gives the cheese a rubbery, semi-firm texture that "squeaks" between the teeth and a higher-than-normal melting point which means it softens when heated but doesn't melt entirely.
For this reason, halloumi is a cheese that can be grilled or pan-fried because it will hold its shape. In fact, the cheese isn't really meant to be eaten cold, as the texture and flavor are more enjoyable if the cheese is heated in some way.
Although the directions below explain how to grill slices of halloumi, the cheese also can be cut into cubes and heated in a pot of soup or threaded onto skewers and grilled with vegetables. You can even sauté cubes of halloumi with oil and garlic or vegetables.
If you want to pan-fry slices of halloumi instead of grilling it, cut the cheese into 1/4- to 1/2-inch slabs. Heat a tablespoon of olive oil in a pan over medium-high heat. Add the cheese and fry for 3 minutes on each side. Often, halloumi is served with nothing more than a squirt of lemon juice on top.
Grilling halloumi is easy. Luckily, these days halloumi can be purchased at most grocery stores. Or look for the cheese at specialty food markets. Halloumi is often sold in pre-packaged 1/2-pound chunks.
1/2-pound block halloumi cheese
1 lemon
Olive oil
Fresh lemon juice
1 tablespoon olive oil (if pan-frying)
fresh herbs such as chopped parsley, mint, basil or oregano (optional)
Slice the halloumi into slabs that are 1/4- to 1/2-inch thick.
Cut the lemon into 4 to 6 slices. You don't want the slices too thin, or they will stick to the grill.
Brush each side of the cheese and each side of the lemon slices with olive oil.
Turn on the grill to medium-high heat. Put the slices of cheese and lemon directly on the grill.
The lemon slices will be done first, taking about 1 to 2 minutes on each side. They should be browned slightly, but not burned.
The cheese slices need about 3 minutes on each side to brown and become soft.
Plate the cheese and drizzle additional fresh lemon juice lightly over the top. Use remaining grilled lemons as garnish. Serve immediately. Fresh herbs could also be sprinkled on top.
If you want to pan-fry the halloumi, cut it into 1/4- to 1/2-inch slabs. Heat 1 tablespoon of olive oil in a pan over medium-high heat. Add the cheese and fry for 3 minutes on each side.
