*Artichoke Hummus
This was pretty good - it has a nice fresh flavor. Adjust lemon juice, salt and parsley to get a flavor you like. The original recipe was a little bland. Maybe try a pinch of cayenne pepper next time.
1 (15 ounce) can chickpeas drained, reserve the water
1 can artichoke hearts
1/4 - 1/3 c. tahini
3 tbsp olive oil
1 clove garlic
2 tbsp lemon juice (we added about 3 Tbsp.)
1 tsp salt
1 tbsp fresh parsley
Chickpea water – as much as you need to get the right consistency
Puree all ingredients in a food processor and blend until smooth. Add chickpea water slowly and as needed to make the hummus the right consistency.
*Sun Dried Tomato Hummus
I added more sun dried tomatoes (probably about 1/3 cup total and the flavor was still faint), I also added more lemon juice, some dried basil, as it was winter, and used almost all the chick pea water - I like my hummus creamy. I would make this again.
One rccipe I found adds 1 tsp smoked paprika. This would give it more flavor. It could use a little more flavor.
1 (15 ounce) can chickpeas drained, reserve the water
2 tbsp extra virgin olive oil
1/4 cup tahini sauce
1 garlic cloves
3 tbsp sun dried tomatoes in oil [one recipe uses 1/2 cup]
2 tbsp parsley [some basil]
2 tbsp of lemon juice
Chickpea water – as much as you need to get the right consistency
Blend until smooth.
If desired serve topped with more olive oil from sun dried tomato jar, additional fresh basil and finely chopped sun dried tomatoes. Serve with pita chips or fresh veggies.

Toasted Pine Nut Hummus
A classic combination. Some recipes say to use the pine nuts and fresh parsley as a garnish. Others add the pine nuts to the hummus, sometimes chopping them first. Another idea is to swirl them into the hummus so some are on top and some are mixed in.
