Mascarpone Frosting

Mascarpone is an Italian cheese that's superrich, delicate and creamy. Here, it's simply blended with confectioners' sugar to create a sublime, snow-white frosting. For the best results, try to buy mascarpone that's very fresh.

If making this frosting ahead of time, make sure to put it in an airtight container and store in the fridge. It will keep for a few days, but because it is whipped, it will not hold its texture for long periods of time. It’s best to make this the same day you’re frosting your cake, if possible. Once a cake has been frosted, you should also refrigerate the cake.

1 1/2 cups chilled mascarpone (12 ounces)
1 3/4 cups confectioners' sugar

In a medium bowl, beat the mascarpone with the confectioners' sugar at medium speed until the frosting is light and fluffy, about 2 minutes.
