Blueberry Muffin Banana Nice Cream

Cool off this summer with this Blueberry Muffin Banana Nice Cream. It is naturally sweetened, delicious, and made with only six ingredients! This nice cream is the perfect combination of blueberry muffins and ice cream! You only need six simple ingredients to make this soft serve. The oatmeal thickens the nice cream and adds a hint of fiber. If you want to make your nice cream sweeter, add a touch of maple syrup, honey, or agave nectar. This recipe is good using raspberries and blackberries, too.

Tips for Making Blueberry Muffin Nice Cream

If you made your nice cream in a loaf pan, simply cover it with plastic wrap, pressing it into the nice cream to prevent freezer burn. It’ll stay fresh in the freezer for up to 3 months. When you’re ready to serve, let it soften for 5 minutes on the counter and then scoop away.

4 bananas, frozen, sliced
1 teaspoon vanilla extract
2 tablespoons Silk Unsweetened Almondmilk
1/2 teaspoon ground cinnamon
1/4 cup toasted rolled oats or your favorite granola
3/4 cup fresh blueberries, chopped

Place frozen bananas, vanilla extract, almond milk, and ground cinnamon in a high-speed food processor and blend until smooth. You may have to scrape the sides of the food processor a couple times.

Add the rest of the ingredients to the food processor and pulse for about 15 seconds. You don’t want blueberries or oats pulverized. Just chopped up.

Pour the soft serve into a bread pan and freeze for at least four hours or over night. Remove from freezer and enjoy. Alternatively you may skip the freezer part and eat right away.
