Custard Pie
from Betty Crocker Cookbook, 1950 edition
The Texas Hot in Wellsville, New York always had custard pie on its menu, and I became very fond of it while working there. I have since found out that this is a traditional pie, or tart, in Britain. This recipe makes a pie that tastes just like the Texas Hot's.
4 eggs
2/3 cups sugar
1/2 tsp. salt
2 2/3 cups hot scalded milk
1 tsp. vanilla
1/4 tsp. nutmeg
Dough for a One-Crust Pie
Beat the eggs. Beat in the remaining ingredients. Pour into 9" unbaked pie crust. Sprinkle top with a little nutmeg.
Bake at 450° F. for 15 minutes. Then at 350° F. for another 15 minutes until a knife on the side of the pie comes out clean. Center will finish setting as it cools.
Best if served cold.
Coconut Custard Pie:
Omit the nutmeg. Stir 1 cup shredded coconut into custard. Pour into pie crust; sprinkle a little coconut over top. Bake as above.
