How to Make Mini Pies for Two

Given all the contraditory information I found, this will take some trial and error testing.

Mini Pie Tins

An average 9-inch pie recipe will yield between four and six individual 5-inch pies (King Arthur Flour sells mini pie tins with these measurments and capacity: 5" x 1 1/4" pans Bakeable capacity: 1/2 cup filling per pie) . Since there is so much variation in the various mini pie plate types and styles, you have to be ready to “wing-it” a little, until you find the measurements that work for your specific minis. Be careful not to overfill your mini plates though, as minis are typically much more shallow than a standard 9-inch pan. For pecan or pumpkin, simply pour in the filling until it comes close to about 1/8th of an inch from the top edge of the shell.

Another person on the Internet said one 9 inch pie recipe would fill two 5 inch pie pans. My pie tins are 6 inches.

For apple pies, it is advisable to pre-cook the fruit, as there is nothing worse than an apple pie with an overdone crust and undercooked apples. For mini pecan pies, toast your pecans in advance for 12-15 minutes at 375°F so they do not get soggy.

How to Convert a Pie Recipe Into Mini Pies

Making Pies in Muffin Tins

One single pie pastry recipe will make six mini muffin tin crusts.

One standard apple pie filling recipe will fill 12 mini pies; you’ll need half a recipe for six mini pies.

One standard pecan pie or pumpkin pie filling recipe will fill 18 mini pies; you’ll need one-third of a recipe for six mini pies.

If making pies in muffins tin, you may want to use a press-in pie pastry dough instead of rolling out a lot of mini pie crusts. See Easy Flour Crust. Because this crust is not rolled out, it can only be used for 1 crust pie (no top crust).
