Avocado Chocolate Mousse

Avocado Chocolate Mousse

Avocado chocolate mousse is a rich, creamy, and healthy plant-based dessert made by blending ripe avocados, cocoa powder, a liquid sweetener like maple syrup, and a splash of plant milk.

Texture & Taste: The natural fats in ripe avocados create a buttery, velvety mouthfeel that mimics traditional dairy mousse, while the strong cocoa flavor completely masks the avocado taste. You actually cannot taste the avocados as long as they are super ripe. The taste is chocolatey, rich, and creamy. With the amount of chocolate, cocoa powder, and maple syrup going into the recipe, there is really no avocado taste. However, the taste will be different than traditional mousse made with heavy cream and eggs.

Ripe avocados are the key to a vegan chocolate mousse with a velvety texture. Incorporating liquids like oat milk and agave syrup makes the mousse easier to blend and also helps sweeten the dessert.

Unlike a traditional French chocolate mousse, in which you have to melt chocolate, make a meringue, then carefully fold together the ingredients to avoid deflating the mixture, this avocado version cuts the work down to blend-and-eat simplicity and the cooking time from nearly five hours to barely five minutes. The avocados work so well because they manage to stand in for both the meringue, which makes the dessert just light enough, and the mixture of yolks, melted chocolate, and cream, which lends traditional mousse its rich flavor and texture.

Being the miracle fruit they are, avocados provide richness, body, and silkiness—while also being whippable to a mousse-like consistency. If you didn’t tell people what the secret ingredient was, they likely wouldn’t be able to figure it out.

From one reviewer: "This is insanely amazing - so tasty and so healthy. I added 2 TBSP of Amaretto liquor (and reduced the sweetener by 1/2) and it's PERFECTION."

3 ripe medium Hass avocados (17 ounces; 480 g), pitted and flesh scooped
1/2 cup plus 2 tablespoons (2 1/4 ounces; 63 g) Dutch-processed cocoa powder
1/4 teaspoon Diamond Crystal kosher salt; for table salt, use a pinch
1/2 teaspoon vanilla paste (can sub vanilla extract)
1/2 cup (120 ml) oat milk (or other dairy or plant-based milk)
1/3 cup (80 ml) light agave syrup

In the bowl of a food processor, process avocados, cocoa powder, and salt until just blended. Using a silicone spatula, scrape down sides of the bowl; add vanilla paste, oat milk, and agave syrup, and process until creamy, 3 to 4 minutes.

Avocado Chocolate Mousse
from https://chocolatecoveredkatie.com/

flesh of 2 ripe avocados (240g)
1/4 cup regular cocoa powder
1/4 cup dutch cocoa OR melted chocolate chips
3-4 tbsp milk of choice
1/2 tsp pure vanilla extract
1/8 tsp salt
sweetener of choice to taste (I like 1/4 cup pure maple syrup)

**You have two options for this recipe: The version with the chocolate chips will be richer; the version with the dutch cocoa (important to use dutch) will be lower in fat and sugar.

Combine all ingredients in a blender or food processor until completely smooth.

I used 3 tbsp almond milk, but if you’re not using a liquid sweetener then you might want to add a little extra for a smoother consistency.
