Baked Fish with Yogurt

Yogurt is a type of acid (lactic) and, like lemon juice, cuts the oily fishy-taste of fish. It also helps to keep the fish moist while cooking. Instead of baking the fish, as in the recipe below, you could grill or broil it. If grilling, cook on aluminum foil to keep the juices from running down into the coals.

Firm flesh fish fillets, such as cod or halibut
Salt & pepper
Paprika
Lemon juice
1 cup plain yogurt
Handful fresh chopped parsley

Place the fish fillets in a baking pan, skin side down. Sprinkle with the salt and pepper, paprika, and a couple of tablespoons of lemon juice. Mix the yogurt and parsley together and spread on top.

Bake at 350 degrees for 20 - 30 minutes until the fish is opaque and the edges start to caramelize with the yogurt. The meat will be flaky. Be careful not to overcook the fish or it will be dry.
