Making Milk from Powdered Milk (including sour milk, condensed milk & evaporated milk)

I often find myself without milk and would like to bake something that needs milk as an ingredient. Having some powdered milk on hand is very useful. You can even make sour milk from it by adding 1 Tbsp. vinegar to the milk once mixed.

The ratio is 4 parts water to 1 part powdered milk (multiple the amount of milk by 1/4).

For instance, mix:

1 cup cold or room temperature water (not hot)
1/4 cup powdered milk

Let the reconstituted milk stand for a few minutes and mix again. This rehydrates the dry milk powder properly.

Make 1 cup reconstituted milk.

You can also make the following from reconstituted milk.

Buttermilk: mix 1 cup reconstituted milk + 1 Tablespoon of white distilled vinegar or freshly squeezed lemon juice. Let it stand for a few minutes before use. Makes 1 cup

Evaporated milk: 1 cup of milk powder + 1 1/4 cup (some recipes say 1 1/2 cups) of cold or lukewarm water. Whisk to combine. Use immediately or store in the refrigerator for up to 5 days. Amount is equivalent to a 12-ounce can.

Condensed milk: 1 cup milk powder + 1 cup sugar + 1 Tablespoon butter + 1/2 cup hot water. Blend to combine, store in the refrigerator for up to 5 days
