Chicken and Biscuits

I never really measured any of the ingredients while making this, and it would differ depending on the size of your chicken, so these are just estimates.

Can cut recipe in half. Use just half a chicken.

1 recipe stewed chicken
Flour and water (for thickening)
3/4 - 1 cup peas
3/4 - 1 cup carrots, sliced
1/2 - 1 cup milk or cream (could use half and half)
Baking powder biscuits

After stewing the chicken, take the meat off of the bones and strain the broth. Cook the broth down if you think there is more than is needed for the recipe. You will need about 6 - 8 cups for a whole chicken. Add the carrots and cook for about 20 minutes. Add the flour mixed with water and cook until the broth has the consistency of gravy. Add the chicken, peas, and the milk or cream. Reheat.

Serve over hot baking powder biscuits. Split the biscuits in half and ladle chicken and gravy over top.

An alternative to starting with a stewed chicken is to use leftover chicken from a roast and make a gravy using chicken broth or bouillon cubes dissolved in water. You could also make chicken stock from the leftover bones from the chicken and adding some celery, carrots and onion along with the bones. Thicken with flour and water and add the milk or cream.
