Breaded Chicken Cutlets
Breaded Chicken Cutlets are good served with pasta. Linguine with Mornay cheese sauce, or, an excellent summer side dish when basil is abundant is Pasta al Pesto. You can add herbs and/or Parmesan cheese to the bread crumbs so they accent the pasta dishes.
Other good sides with Chicken Cutlets are mashed potatoes and peas or other vegetable. Susan's Mashed Potatoes made with sour cream and Parmesan cheese would be a good choice, although traditional Mashed Potatoes are great, too.
We made these when Candace was here and she said they were much better than hers. We cook ours in butter, she cooks in olive oil. Daniel Gritzer at https://www.seriouseats.com/ says, "So recently, when I was about to fry some chicken cutlets for dinner, I decided to be lavish and add the clarified butter to the pan instead of a more standard frying oil. And just like that, I made the most delicious fried chicken cutlets ever."
Basic Recipe
Boneless chicken breasts
Flour
Salt and pepper
Beaten egg mixed with a little milk
Fine bread crumbs
Butter for frying
Pound the chicken out so it is about 1/4" thick. Season the flour with salt and pepper. Dredge the chicken cutlets into the flour (the flour gives the chicken a dry surface so the beaten egg adheres to the meat). Then dip in the egg beaten with milk, and finally coat the chicken in the bread crumbs. Be sure to cover well. Heat about 1/4 inch of butter in a skillet. Fry chicken until lightly browned. Serve immediately or keep warm in a 200 degree oven.
