Chicken Breasts with Herb Stuffing

This dish is great for a dinner party. It looks and tastes amazing. The mixture of the honey, lemon juice and parsley poured over the top of the chicken breasts is heavenly.

1 14-ounce can chicken broth (1 3/4 cups)
2 medium carrots, shredded
4 cups seasoned herb stuffing [must mean dry stuffing that you buy given the amount of liquid]
6 chicken breast halves, skinned [I would leave the skin on]
2 tablespoons honey
2 tablespoons lemon juice
1 tablespoon chopped fresh parsley
3 lemon slices, cut in half

In saucepan, mix broth and carrots. Over medium-high heat, heat to a boil. Remove from heat. Add stuffing. Mix lightly.

Spoon into greased 3-quart shallow baking dish. Arrange chicken over stuffing.

Bake at 375 degrees F for 50 minutes.

Mix honey, lemon juice and parsley. Brush over chicken. Place lemon slices on chicken. Bake ten minutes or until chicken is done. Stir stuffing.
